Fresh Guacamole Dip for the Memorial Weekend BBQ

Happy Memorial Weekend to everyone. This is a weekend to commemorate our fallen soldiers in wars past and present. I want to thank all who have served for our country.

Many of us will get together with family or travel and one of the agenda’s will be to have an outdoor BBQ. One thing that can compliment a great BBQ is a good guacamole dip.

I wanted to share a guacamole recipe I had discovered in my travel to San Antonio two years ago where it was at Boudro’s on the River Walk. I had a chance to taste this wonderful guacamole dip that was made fresh right in front of you. The key to this is serving it “fresh.”

Famous Guacamole Dip from Boudro's

Ingredients

Juice of 1/4 of an orange
Juice of 1/2 a lime
1 avocado seeded and scooped out of skin
2 Tbs roasted and charred Roma tomatoes diced
1 ea Serrano pepper roasted seeded and diced
1 Tbs medium dice red onions
1 tsp chopped cilantro
coarse ground salt to taste (sea salt is better)

Directions
Squeeze juices into bowl. Add avocado and coarsely chop. Add onions, roasted tomato, serrano and cilantro fold into avocado mixture. Add salt (more is better). Result should be crudely chopped not mashed. That’s it. Enjoy!

I look forward to hearing your comments.

Christina Normile, why she chose Michael Holtz for her wedding entertainment.

Christina Normile and her fiancé Ben Borgland will be married in August of this year. Christina had seen me perform at a friends wedding. When meeting with her and planning her reception I had mentioned I was doing video testimonials of couples I have performed for. She thought that was a great idea and presented me with another idea. Doing a video of a client that had seen me at a wedding and why she chose me as her DJ.

I am honored that Christina was willing to do this video and I am looking forward to her wedding in August and adding the post wedding video.

Just Married!

Welcome to my blog. In my blog I will be sharing experiences with you regarding my upcoming weddings, providing tips and information in the wedding industry and to let you know what is going on with myself.

For my first blog post I want you share with you my own wedding experience. I have been married to my lovely wife, Rose for a little over two years. “So Michael, you just didn’t get married like the title states?” No, but it still only seems like yesterday.

We were married on 11.08.08. It was a day that my wife and I will never forget and neither will our guests. To this day our guests still comment on what a wonderful ceremony, food and reception we had and that it was like no other wedding they have been to.

When my wife and I planned our wedding we were focused on bringing out our personality from the ceremony to the dance. I discuss this a lot with my couples because your only going to get one shot at this and this is your day so make it your day.

One of the biggest things my wife and I were able to add to our wedding experience was culture. My wife is originally from Haiti. For our dinner we served a Haitian style dinner entrée. We included the Haitian culture in our music mixing it in with your traditional wedding music and it was amazing to see the number of people that stayed on the dance floor just to learn a different style of dance.

Now you can probably guess what the main importance of the evening was. If you guessed entertainment, congratulations! It was important to us that we threw a party of a lifetime for our guests and at the same time telling our Love Story and why they were there to celebrate this special occasion.

Please view the video I have included in this post of the special night my wife and I were able to experience.

Thank You!
